Veggie Patty Wraps

So Melissa is busy this time around has requested for my not so professional assistance for her blog.
Good evening ladies and gentlemen, My name is Darren Cheah. I am 21 this year, a student in University of Toronto and I will have guest appearances on this blog every now and then whenever Melissa is busy.

So this time around we are going vegetarian. Shout out to all you beautiful people out there this one is for you and ofc those who just enjoy vegetarian food. (Hey, it's healthy so why not.)
and I swear on my family name. This recipe is super easy to make and is perfect for those lazy days where you just sleep in and forget you have to cook.

So here's what you need for a beautiful simple meal of veggie patty wraps:

Ingredients:
Veggie burgers
Rocket
Apple
Avocado
Reduced fat feta cheese
Sweet chilli sauce

Method:
1. Firstly, pan fry the veggie patties according to the directions on packaging
So, this time around we just used some very simple premade  patties which you can probably pick up from any grocery store nearby.

We heat the pan and spray it with canola oil before putting the patties on. You can just heat it up using normal cooking oil from the bottles but the spray just makes it a whole lot easier to spread evenly across the pan.


Then cook your beautiful little patties till they have a nice little bit of color on both sides (brown both sides of the patty). I personally enjoy the difference in texture this creates on the patties.

And finally it should look a little something like this when it's done. Ain't that a beauty.

2. We're going to need to Julienne apples.

Just in case you don't know what julienne means just thinly slice the apples into small bite-sized slices.

3. Then we slice ½ an avocado
Of course, cut it in half and remove the seed.
Then slice the avocado into thin slices like the apples


4. Now that all of the ingredients are prepared, VEGGIE PATTY WRAP ASSEMBLEEEEE.
voila the fruit of our loins from all that prep work
Place onto a wrap of your choice and tadah we have a beautiful healthy veggie patty wrap.

P.S. : Just in case you were wondering, "WHERE DID THE CHEESE GO?" Yeahhhh. um. We forgot to get some. AYY LMAO.  but yeah so for the lactose intolerant this ones for you <3 but for those who really want cheese, just include in the step where you assemble the wrap. Same goes for the chilli sauce.

Grilled Cheese Sandwich

So last weekend I bumped into an ex-committee member of this association I'm in and he requested for a recipe for a grilled cheese sandwich. Now, I've made this a million times, but I never followed any recipes so like what any other sane person would do, I held a grilled cheese party. 


Here's what you need for one serving:
2 slices of bread 
2 slices of cheese
butter

Method:
1. Butter one side of each slice of bread.
2. Place one slice of bread (butter side down) in a heated pan.
Included: Zhao De's hand
3. Place both slices of cheese and top it off with the second slice of bread (butter side up)
I used a slice of cheese for this due to the fact that I had to feed 9 people (including myself) and there wasn't enough cheese to go around
4. Flip the sandwich over to toast the other side once the first slice of bread is browned and toasted to golden perfection (so cheesy, geddit?)
5. Serve when hot.
I made a huge pot of my seafood tomato soup to accompany this because grilled cheese and tomato soup is a match made in heaven <3
Look at all this bread omg. Thanks ZD, Joanna and Diong for getting this all buttery and oiled up for cheesy perfection.
Note: I received 1.5kgs of honey from my uncle today and I drizzled some of that onto my sandwich and it was perfect as frick.

Chinese Roasted Pork Wrap

So the other night I just came back from dinner with my family friends and my friend Nick drove all the way to the city just to bring me some homemade roasted pork, or as the chinese call it "Siew Yoke" (Bless you, Nick. You da best.) And I had the brightest idea to throw it in a wrap and incorporate my current obsession for sweet chilli sauce for breakfast the next day (which didn't happen), which gave me more time to get more ingredients and make it for dinner. Turned out to be the best thing that happened to me all weekend. 

Yield: 1 serving

Here's what you need:

1 tortilla wrap 
1-2 tbsp sweet chilli sauce 
2 pieces roasted pork
3 slices of apples, julienned
a handful of rocket

Method:
Assemble wrap as shown below.

Roasted Pork
Sweet Chilli Sauce
Rocket and Apple
Fold the bottom over the filling and fold in the sides to seal the wrap. Enjoy!

Roasted Chicken with Lemon and Tarragon

Hey guys! My sincerest apologies for being MIA for so long, had a lot of stuff in my life to sort out that I didn't really have the time to come up with new things. But I'm back now with a few new recipes for you guys to try out :3 Also, welcome back to uni! (Though we're already in week 3 LOL) Anyways let's get started!

NOTE: Prep this the day before as it has to be left to marinate overnight.

Here's what you need:

1 piece chicken breast/chicken thigh
1/2 lemon, sliced
1 bunch tarragon 
3 tbsp olive oil
Salt and pepper to taste

Method:

1. Cut a slit along the middle of the chicken breast/thigh. Make sure you do not go all the way through.
2. Season with salt and pepper and leave to marinate overnight in the fridge.
3. Preheat oven to 200°C. Line a baking tray with foil and grease.
4. Place sliced lemon and tarragon into the slit and drizzle 2 tbsp olive oil into it.
5. Drizzle the rest of the olive oil onto the top of the chicken.
6. Bake for about 20-25 mins and serve with sweet chilli sauce.

Chia Seed Pudding

I stumbled across this recipe ages ago and took a screenshot of it but I can't really seem to remember where I got it from so credits to the author :3

Chia seeds could be pretty expensive for a student budget but there are places that sells them at a reasonable price if you know where to find it. For instance, if you're in Melbourne, you can try looking at the Sweet & Nut Shop down Russell St (contact details here). I got 250g of Black Chia Seeds for $6.50 (which is pretty decently priced for me)

Anyhoo here's what you need: 

1/3 cup Chia Seeds*
1 1/2 cup milk 
2 tbsp maple syrup
1/2 tsp vanilla extract

Method:

Combine all ingredients in a container or jar. Stir until all is mixed evenly. 

Leave overnight in the fridge and serve with fruits as desired.

The chia seeds will expand and turn into a pudding-like consistency (hence chia seed pudding)

Variations:

Matcha Coconut Chia Seed Pudding

To the mixture:

Substitute milk with coconut milk 
Add 1 tsp matcha powder

Matcha Coconut Chia Seed Pudding with Strawberries and Toasted Coconut Chips

*It doesn't really matter whether you use black or white chia seeds as there's really no difference between the two except for the colour.

Seafood Tomato Soup

As a student, I understand that sometimes we all like to treat ourselves to something fancy but can't be bothered to clean up all those dishes needed to prepare said fancy dish. So here's something pretty fancy and super easy (you can defs make this for someone and tell them that you spent ages making it and they'll probs believe you because it tastes awesome k)

What you need:
500g marinara mix 
1 can of tomato soup
1/2 bell pepper, diced 
1/2 yellow onion, diced
Salt and pepper to taste
(Optional) Dried parsley to garnish

Method:
1. Add 1 tsp canola oil (or any other oil) to a pot and throw in the diced onion. Lightly fry it until it's slightly brown and translucent before adding in bell peppers. Fry until slightly brown as well.
2. Add tomato soup into the pot and prepare according to instructions on the can. (At this point I would add just a little more water than required because I personally find it salty af)
3. Bring it to a boil and add the marinara mix. Let boil for about 5 -10 minutes (until the seafood is cooked but be careful not to overcook it)
4. Garnish with dried parsley and serve while hot with some toasted sourdough or a grilled cheese sandwich.

Sweet Potato Curry

So the other day I just had my usual thursday workout and I was really tired and needed my carbs to replenish my energy since I haven't been eating much for the past few days and I was also thinking about the potato stew from Om Vegetarian (It's dabest ok) so I decided to make something quick and easy.

What you need:
2 medium sweet potaoes, cubed. (Should get around 2 cups)
3 tbsp curry powder
4 tbsp greek yoghurt
1 ½ c water
½ tsp ground cumin
Salt and pepper to taste.
What you need

Directions
Heat a pan (or pot) with 1 tsp canola oil
Toss in sweet potatoes and fry for 1 min.
Sprinkle curry powder onto sweet potatoes and stir to coat evenly. Add water and greek yoghurt. Stir to mix evenly.
Season with cumin, salt and pepper.
Let simmer for 15-20 minutes (covered) until tender.
Serve hot with rice or naan bread.
Optional: Add 1 c canned chick peas (drained) right before serving.
NOTE:
If you like it less spicy, add less curry powder and more greek yoghurt. You can use coconut milk or cream instead of greek yoghurt but I opted for the lower fat option. Though, if you were to use coconut milk, reduce water by ½ cup.
